Tucked in the northwest in La Democracia municipality in Huehuetenango, we find this beautiful farm, Finca El Captzin. Founded in 2000 by Santiago Molina, his granddaughter Brenda now runs the farm and represents the third generation to have worked the farm.

The perfect breakfast coffee, nice rich mouth feel, notes of Mandarin Orange and Cinnamon, sweet milk chocolate finish.

About this product

The farm was named after the famous stone in Huehuetenango called the “K’ab Tzin” in the Q’anjobal language. “kab” means two, and “tzin” in the onomatopoeia of the sound of metals or stones. Combined “kab’tzin” means two stones or rocks. They are quite striking as they are two vertical stones situated amidst the ravine. You can see them here https://www.youtube.com/watch?v=jRYfP07vGiI. The family discovered a similar looking stone on the farm and decided to name the farm “Captzin.”

After picking, the coffee is sorted by colour. Once sorted the coffee is moved to the wet mill where each bag is analysed and sorted to remove unripe or defected beans. Once the coffee is approved it moves to the flotation tanks. After the floaters are removed, the coffee is pulped and then moved to the fermentation tanks. The coffee ferments for approx 24 hours depending on the weather.

When the coffee is ready, it passes through the demucelager. From there the coffee goes to the washing channels where any less dense beans are separated out from the denser beans. The beans move to the end of the channel using density, where they await transfer to the patios or raised African beds. The water used for the process comes from a natural spring. The water is used several times before being treated naturally to ensure that it doesn’t pollute the environment.
