This classic washed coffee exemplifies the fully washed processing method used by 40% of Ethiopian coffees since 1960. Our farming partners handpick the cherries in the morning and deliver them to washing stations by afternoon in Bensa Logita.
After weighing, the cherries are hulled to separate the fruit from the beans, which are then soaked in freshwater fermentation tanks for 24–72 hours, depending on temperature. We deeply respect our relationship with farmers and this crucial processing stage, knowing it greatly influences our coffee's quality.
