MEXICAN DECAF COFFEE
Sourced from smallholder farms in Mexico, where over 500,000 farmers cultivate coffee - many organically and on family-run farms - this coffee reflects the rich traditions of its origin. It is decaffeinated using the Swiss Water Process, a chemical-free method that removes caffeine while preserving the coffee’s natural flavours.
The process involves soaking green coffee beans in fresh water to dissolve the caffeine, which is then filtered out using activated charcoal. Since water can only absorb a limited amount of flavour compounds, this method ensures that the coffee retains its bright, smooth character.
