Course Overview
This two-day course covers the fundamentals of specialty coffee, moving from theory to intensive hands-on practice. Upon passing a short exam at the end of the second day, a student will be issued a RAW Completion Certificate.
Day 1: The Art of Brewing
We start with the journey of coffee from "seed to cup" and what makes specialty coffee unique. The rest of the day is dedicated to:
- Basic brewing techniques and extraction variables.
- Correct techniques and equipment selection.
- Steps to producing high-quality brewed coffee.
Day 2: Espresso & Milk Mastery
- Milk stretching/texturing
- Adjusting your grinder to achieve your extraction parameters
- Beverage building and recipes
- Machine cleaning and maintenance
- Pouring and latte art basics
